Whipped Feta, with Balsamic Vine Roasted Tomatoes

Ingredients:

250g cream cheese
200g feta
2 Tbsp greek yoghurt
300g vine tomatoes
2 Tbsp olive oil
2 Tbsp balsamic vinegar
1 clove crushed garlic
4 sprigs fresh thyme
Salt and pepper to taste
Loaf crusty bread

Method:

  1. Mix together the olive oil, balsamic, thyme and crushed garlic
  2. Add salt and pepper to taste
  3. Add tomatoes and leave to marinate at room temperature for at least 1 hour
  4. Place the tomatoes in an oven tray
  5. Turn on oven to 150c (fan) and roast for 25 minutes
  6. In a kitchen whizz or NutriBullet, add cream cheese, yoghurt and feta, whip till creamy
  7. Add a few grinds of black pepper
  8. Spoon the whipped feta onto a platter, pile up tomatoes on the top, serve with warm crusty bread and a glass of The Sisters Pinot Rosé!
