Ingredients:
250g cream cheese
200g feta
2 Tbsp greek yoghurt
300g vine tomatoes
2 Tbsp olive oil
2 Tbsp balsamic vinegar
1 clove crushed garlic
4 sprigs fresh thyme
Salt and pepper to taste
Loaf crusty bread
Method:
- Mix together the olive oil, balsamic, thyme and crushed garlic
- Add salt and pepper to taste
- Add tomatoes and leave to marinate at room temperature for at least 1 hour
- Place the tomatoes in an oven tray
- Turn on oven to 150c (fan) and roast for 25 minutes
- In a kitchen whizz or NutriBullet, add cream cheese, yoghurt and feta, whip till creamy
- Add a few grinds of black pepper
- Spoon the whipped feta onto a platter, pile up tomatoes on the top, serve with warm crusty bread and a glass of The Sisters Pinot Rosé!
