Ingredients:

  • 450 grams prawns
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1/2 teaspoon red pepper flakes (adjust to your spice preference)
  • Salt and pepper to taste
  • 225 grams orzo pasta
  • 1/4 cup chopped fresh herbs (optional, for garnish)

Instructions:

  1. Cook the orzo pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
  3. Add the prawns to the skillet and cook for 2-3 minutes per side until they turn pink and opaque.
  4. Stir in the lemon zest, lemon juice, red pepper flakes, salt, and pepper. Cook for an additional 1-2 minutes to allow the flavours to meld.
  5. Add the cooked orzo to the skillet with the prawns. Toss everything together until well combined and heated through.
  6. Serve the Lemon Garlic Prawns with Orzo in bowls, garnished with the herb of your choice (basil, parsley, coriander all work) if desired.
  7. Pair this dish with a crisp white wine such as Sauvignon Blanc or Pinot Gris to complement the flavors.
